Tasting Notes:

It has an intense golden-green color and a broad fruity aroma of green olives and botanical references with remarkable finesse. On the palate a fresh texture of herbaceous notes is supported by a relevant bitterness, it finishes in a long and balanced spiciness.

We started growing olives at the Varignana hills in 2017. Currently, we cultivate 200 acres of olive groves at Palazzo di Varignana. We focus on rescuing and cultivating Emilia-Romagna historical olive cultivars - Ghiacciola, Nostrana di Brisighella and Correggiolo.

The olive harvest at Palazzo di Varignana takes place slightly earlier than optimal ripening period. This choice, although at the expense of the olive oil yield, allows us to produce olive oils rich in polyphenols which are antioxidants naturally contained in olives. Our olive oils elegantly reflect in their aroma profile characteristics of perfumes and freshness typical of green olives. 
Most of our olives are mechanically picked (Vargnano and Blend Blu are hand-picked) and pressed at very low temperatures (around 24 C) in a maximum of 12 hours after harvest in order to guarantee perfect ripening and ideal acidity to preserve its aromatic profile and healthy properties.
In 2018 our olive groves agricultural practices have been converted to organic. We will become organically certified in 2022 when we will conclude the construction of our own mill.

Shipping Guidelines

Due to high order volume at this time, shipping may be slightly delayed; we'll do our best to process your order as quickly as possible.

Palazzo di Varignana only ships within the contiguous United States. Please note that delays may occur due to weather, availability, or other unforeseen circumstances.

Orders placed on in-stock items before 12 p.m. EST Monday through Friday will ship that day. Orders placed after 12 p.m. EST Monday through Thursday will ship the following day. Orders placed after 12 p.m. EST on Friday will ship the following Monday.

We guarantee delivery only to the address you provide. Shipments that you re-direct and shipments to incorrect or incomplete addresses cannot be guaranteed to deliver on time. We do not deliver to P.O. boxes. When incorrect addresses are provided, you are subject to any additional shipping charges that may occur. 

We are not responsible for packages sent to international reshippers once the initial delivery has been made.

Winter Shipping

Shipments during the winter will often arrive frozen or extremely cold. The oil will appear frozen solid or "clotted". In such cases, DO NOT OPEN THE BOTTLE. Let the bottle warm up to room temperature gradually, and vigorously shake the bottle.

Summer Shipment

Some customers choose express shipping during the summer months. On summer weekends, we may hold Friday shipments for release on Monday. We would rather keep your shipment in our temperature controlled warehouse on exceptionally hot weekends.


Due to the rapidly evolving COVID-19 pandemic, we are temporarily suspending exchanges and returns on all products, with the exception of offering refunds for items if the return is a result of our error, a defective product, or product which does not meet our quality standards.

Damages and issues
Please inspect your order upon reception and contact us immediately if the item is defective, damaged or if you receive the wrong item, so that we can evaluate the issue and make it right. We only accepts claims until 5 days after delivery of product to you.


We will notify you once we’ve received and inspected your return, and let you know if the refund was approved or not. If approved, you’ll be automatically refunded on your original payment method. Please remember it can take some time for your bank or credit card company to process and post the refund too.
