The Palazzo di Varignana food project aims to spread the culture of Extra Virgin Olive Oil.
Today, 200 hectares of new olive groves shape the profile of the hills surrounding the Resort: over 150,000 trees produce an extra virgin olive oil of the highest quality, with intense taste sensations and great aromatic complexity. The ancient origins of this cultivation are combined with modern espalier training and mechanised harvesting techniques, making it productive and extremely sustainable. Today Palazzo di Varignana harvests over 400,000 kg of olives from which about 60,000 litres of oil are produced.
Every year new portions of the olive grove enter production, defining a path of quality that will bring - year after year - Palazzo di Varignana to be the first producer in Emilia Romagna as well as a school case in the creation of chains of agronomic quality, restoration of native crops and landscape protection.
Love and respect for the territory have led to the choice of the most representative cultivars of Emilia Romagna, such as Ghiacciola and Nostrana di Brisighella. These, together with the Frantoio and Leccino varieties, present in a smaller percentage, make up about half of the olive groves (110 hectares) with a density of 450/500 trees per hectare. In the other half of the olive groves, there are cultivars from central Italy, such as Maurino and Leccio del Corno, with a density of about 900 trees per hectare.
The care and attention paid to each phase, from cultivation to packaging, results in 5 types of excellent Extra Virgin Olive Oil, of which three are Monocultivar for the Ghiacciola, Nostrana and Correggiolo varieties. Of particular value are the two Blends: the Riserva in which we find Frantoio, Leccino and Pendolino. Blend Verde is a combination of Maurino Vittoria, Verzola, and Leccino olives.
Tasting Notes: It has a light green color; the nose is broad and aromatic which recalls the olive in the right degree of ripeness. In the mouth, it is medium-intense fruity, where there are well-distinguishable notes of artichoke, green apple, and freshly cut herbs and rocket. It closes on a very balanced bitter and spicy note.

Today, 200 hectares of new olive groves shape the profile of the hills surrounding the Resort: over 150,000 trees produce an extra virgin olive oil of the highest quality, with intense taste sensations and great aromatic complexity. The Palazzo di Varignana food project aims to spread the culture of Extra Virgin Olive Oil.
Today, 200 hectares of new olive groves shape the profile of the hills surrounding the Resort: over 150,000 trees produce an extra virgin olive oil of the highest quality, with intense taste sensations and great aromatic complexity. The ancient origins of this cultivation are combined with modern espalier training and mechanised harvesting techniques, making it productive and extremely sustainable. Today Palazzo di Varignana harvests over 400,000 kg of olives from which about 60,000 litres of oil are produced.
Every year new portions of the olive grove enter production, defining a path of quality that will bring - year after year - Palazzo di Varignana to be the first producer in Emilia Romagna as well as a school case in the creation of chains of agronomic quality, restoration of native crops and landscape protection.
Love and respect for the territory have led to the choice of the most representative cultivars of Emilia Romagna, such as Ghiacciola and Nostrana di Brisighella. These, together with the Frantoio and Leccino varieties, present in a smaller percentage, make up about half of the olive groves (110 hectares) with a density of 450/500 trees per hectare. In the other half of the olive groves, there are cultivars from central Italy, such as Maurino and Leccio del Corno, with a density of about 900 trees per hectare.
The care and attention paid to each phase, from cultivation to packaging, results in 5 types of excellent Extra Virgin Olive Oil, of which three are Monocultivar for the Ghiacciola, Nostrana and Correggiolo varieties. Of particular value are the two Blends: the Riserva in which we find Frantoio, Leccino and Pendolino. Each cultivar expresses its own identity, which translates each season into a different oil, like a palette composed of various shades of green and with olfactory tones ranging from medium to intense fruitiness.

Orders placed on in-stock items before 12 p.m. EST Monday through Friday will ship that day. Orders placed after 12 p.m. EST Monday through Thursday will ship the following day. Orders placed after 12 p.m. EST on Friday will ship the following Monday.
We guarantee delivery only to the address you provide. Shipments that you re-direct and shipments to incorrect or incomplete addresses cannot be guaranteed to deliver on time. We do not deliver to P.O. boxes. When incorrect addresses are provided, you are subject to any additional shipping charges that may occur.
We are not responsible for packages sent to international reshippers once the initial delivery has been made.
Winter Shipping
Shipments during the winter will often arrive frozen or extremely cold. The oil will appear frozen solid or "clotted". In such cases, DO NOT OPEN THE BOTTLE. Let the bottle warm up to room temperature gradually, and vigorously shake the bottle.
Summer Shipment
Some customers choose express shipping during the summer months. On summer weekends, we may hold Friday shipments for release on Monday. We would rather keep your shipment in our temperature controlled warehouse on exceptionally hot weekends.
Refund Policy
Due to the rapidly evolving COVID-19 pandemic, we are temporarily suspending exchanges and returns on all products, with the exception of offering refunds for items if the return is a result of our error, a defective product, or product which does not meet our quality standards.

Damages and issues

This very limited production is obtained exclusively from the cultivar Nostrana.
Tasting Notes: The olives are still harvested green, which allows the cultivar to best express its characteristics. The oil is pale green in color, and the fruitiness is intense, with ample herbaceous fragrances of green apple, rhubarb leaf, and tomato; the palate emphasizes the aromatic breadth and closes an elegant spicy green olive.
