The Palazzo di Varignana Estate spans 242 hectares of magnificent olive groves, home to 150,000 trees that shape the rolling hills surrounding the resort, offering a picturesque and timeless panorama. This centuries-old tradition of olive cultivation is seamlessly intertwined with modern advancements, including espalier training systems and state-of-the-art mechanized harvesting techniques, ensuring both exceptional productivity and sustainable practices.
The care and attention paid to each phase, from cultivation to packaging, results in 5 types of excellent Extra Virgin Olive Oil:
- 3 Monocultivar for the Ghiacciola, Nostrana and Correggiolo varieties of olives
- 2 Blends: which we find Frantoio, Leccino and Pendolino varietiee of olives
Each cultivar expresses its own identity, which translates each season into a different oil, like a palette composed of various shades of green and with olfactory tones ranging from medium to intense fruitiness.
