Chardonnay, an international and multifaceted variety, has found in Italy and in the Varignana area a special microclimate to express the qualities that have made this vine famous throughout the world.
Chardonnay wine is a grape variety from which the finest and most famous wines come, one of the most cultivated white grape varieties in the world.
The density of the soils and the strong temperature fluctuations between day and night in the Varignana lands enhance the aromatic potential of this grape variety, making it rich and persuasive.
The colour of Chardonnay is bright yellow, its aroma is delicate and recalls hints of fruit such as pear, white flower and vanilla, the unique characteristics of this wine.

Characteristics

Characterised by a brilliant yellow colour. The nose is captivating and opens with intense aromas of white flowers, pear and vanilla. Subtle mineral hints, creamy on the palate, it is refined with a good balance between acidity, body and fresh fruit notes. Serving temperature 12°-14°C.

Chardonnay from the western slope. Thin foliage with bunches exposed to the sun.

Soil

Mixtures of yellow sands rich in mineral and stony elements

Vinification

Harvest of the fully ripe grapes in the cooler hours of the day, extraction of the must, cold static decantation, fermentation in temperature-controlled cement vats and a fraction consecutively in wood. Maturation during the winter on the lees and bottling during the spring following the harvest.

The acidity and freshness of Chardonnay balance the delicacy of raw or lightly marinated fish such as fish carpaccio or tuna or salmon tartare.
Perfect with creamy or slightly citrusy dishes, where the wine refreshes the palate, such as lemon and shrimp tagliolini or seafood risotto.
Chardonnay pairs well with white meats and delicate fish dishes.
It also pairs well with vegetarian dishes such as vegetable quiches, zucchini flans, fennel and orange salads, and pea or asparagus soups.
