Pinot Noir is a monovarietal wine, i.e. made from a single grape variety. Vineyards with a black grape variety produce a light ruby red wine that represents the silkiness of Palazzo di Varignana, the noblest interpreter of a bold territorial challenge. A wine that is processed using specific vinification techniques and then continues in French oak barrels.
The mosaic of soils typical of the calanchi landscape surrounding the hills of Palazzo di Varignana gives the Pinot Nero wine unique characteristics. The concentration of the blue clays and the aromatic expression of the yellow sands generate a complex, classic and elegant wine capable of bringing out all the potential of this territory.

Characteristics
Shows an elegant ruby red colour. The nose opens with hints of violets and small, dark, ripe red fruits. A rose petal accompanies the spice and tobacco on the finish. On the palate the wine is broad and velvety, succulent in its clean, well-defined fruit; a perfect balance of its components enhances its pleasantness and delicate persistence. Serving temperature 16°-18°C.

Mixtures of blue clays and calcareous sands.
Vinification
Harvest of the grapes when fully ripe, gentle destemming and cold maceration before fermentation in cement. Maturation in cement and wood for the year following the harvest.

The medium body and delicate tannins of Pinot Noir pair well with flavorful but not overly fatty white meats such as roast guinea fowl and stuffed turkey.
Pinot Noir is one of the few red wines that can hold its own with structured or fatty fish dishes. Mushroom-based dishes or those with earthy notes are in harmony with the aromatic characteristics of Pinot Noir.
