The history of Palazzo di Varignana is based on the border where typical Emilia-Romagna crops met those of Romagna.
This is where our Sangiovese Superiore DOC wine was born, a wine that gives dignity to the roots of Emilia-Romagna and the Varignana area.
Sangiovese is one of the most widespread and black-grape varieties that has found its home in Romagna. A wine suitable for every type of menu, from first courses to meat sauces, grilled and baked red meats.
Sangiovese Superiore is one of the Palazzo di Varignana wines that can be tasted at the winery.
Characteristics
Shows an intense ruby red colour with violet reflections. The nose expresses hints of cherry and small red and black fruits sublimated by ethereal notes of liquorice. On the palate the wine is slender, fresh and balanced with a vibrant tannic part that tells the true soul of the Varignana land. The savoury and persistent finish recalls the aromas perceived on the nose. Serving temperature about 18°C.

Sangiovese from west-facing vineyards.
Soil
Calcareous sandy loams.
Vinification
Harvest of the grapes when fully ripe, gentle destemming and maceration in cement vats with temperature-controlled red vinification. Maturation in wood and cement for the year following the harvest.

The body of Sangiovese Superiore pairs well with succulent dishes, even slightly spicy ones such as pappardelle with wild boar, lasagna Bolognese, or mixed grilled meats or roast veal or beef.
The structure of the wine pairs well with the savory flavor and richness of cheeses such as pecorino di fossa, aged caciotta, or Parmigiano Reggiano (18+ months).
Pairings with vegetarian dishes: legume soup, polenta with porcini mushrooms, or pumpkin and pecorino flan.
