Characteristics

Golden yellow in colour with fine, dense perlage. The nose offers persuasive notes of white flowers and pear. Balsamic and cedar fragrances prepare for drinking. The attack is ample, creamy, with pleasant floral and fruity sensations supported by a nice fresh and savoury tension that runs through the entire sip. Serving temperature is 6°-8°C.

Vinification

Harvest of the grapes at the perfect degree of ripeness in the coolest hours of the day, direct pressing of the grapes and fractioning of the must, followed by fermentation at a controlled temperature in stainless steel tanks. Foaming in the spring of the year following the harvest, it is bottled in a temperature-controlled environment. Disgorgement takes place after at least 24 months of ageing on its own yeasts.

Blanc de Blancs is perfect for enhancing raw fish dishes thanks to its freshness and minerality, such as oysters, white fish tartare, sea bass carpaccio, tuna, or salmon.

This wine enhances the delicacy of fish without overpowering it, but rather bringing out its best qualities. Recommended for seafood or lemon risotto, spaghetti with clams, or oven-baked sea bream fillet with herbs.

Pairs well with vegetarian dishes such as vegetable tempura, salads with fresh fruit (green apple, citrus, pomegranate), zucchini or asparagus flan, or couscous with vegetables and mint.
